Corn Salad

Looking for a fast delicious side dish for summer?


This corn salad is super easy to make and very tasty! 

 My girl friends and I have decided to share recipes once a month...meaning, we're alternating houses and bringing a dish to share!  Last week, the theme was "salads".  I wanted to do something a little different, so I ended up bringing Corn Salad!   


Ingredients:
6 ears of corn, shucked or 1 bag frozen corn (dethawed)
1 can black beans, drained and rinsed
1/2 cup finely diced red onion
1 cup cherry tomatoes, sliced in half
3 tablespoons cider or red wine vinegar
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Directions:
1.  Cook corn...if using ears of corn, cut kernels off. 
2.  Place corn and all other ingredients in bowl, toss.
3.  Serve at room temperature or cold....I personally like it cold!  

That's it...quick, simple, and delicious!
